Pink is the new black!

Neapolitans were proud of their creation and considered their pizzas an art form. Nowadays pizza itself has changed so much that it hardly resembles its Neapolitan ancestor. But at Rico’s we have a vision to make pizza art again.

Dough

The only ingredients needed for Neapolitan style pizza are all-purpose or bread flour, salt, instant yeast, and water. We seek out a finely milled Italian style brand of flour. Also, we use a no-knead mixing method and a long cold ferment, in which the dough rises for three to five days in the refrigerator. This combination of techniques produces a flavorful dough that is simultaneously one of the simplest and most complicated to create.

Tomatoes

Roma: Is the classic tomato used in Italian cooking. It's popular for canning and making tomato paste, and is readily available. Though the classic Roma is 7,5 centimeters long, larger varieties are now available. The downside is that Romas are not as sweet as some of the similar heirloom tomatoes, such as Amish Paste; orange Romas are a little sweeter than the common red variety. But our tomatoes come from the best organic farms in Czech republic and they hit the right amount of sweet taste on our pizza.

Cheese

In general, low-moisture mozzarella is our go-to for pizza. We are avoiding the pre-shredded cheese. Pre-shredded mozzarella generally has additives like potato starch to prevent pieces from clumping together. Unfortunately, the starch prevents it from melting into a smooth cheesy layer. Pre-shredded mozzarella can still be delicious but we believe in using high-quality mozzarella we‘ve shredded ourself is the one-way ticket to pizza heaven.

Basil

To grow the perfect basil you need moist soil – not too wet and not too dry. You want the soil to be damp, not drenched. Although basil loves warm weather, a hot midday sun can be rather harsh. If you see wilting only during the peak hours for summer temperatures, you may need to add light shade over your basil plant. So growing the perfect basil is a science project. That's why we are growing our basil in our own greenhouse next to our precious tomatoes.

Our Interior is full of paintings, posters and all other forms of art. While Rico was in Naples to learn the way of the bets pizza he was traveling with Subway around the city and he fall in love with all the art that each station had! So now we make exhibitions directly in the restaurant - we hope you will love them as much as we do.
